A2 ghee is produced from the milk of a particular breed of cattle known as the Gir cow. These cows are native to the Gir forests in Gujarat.

On the other hand, regular ghee is produced by mixing the milk of buffalos and cows. These animals are mostly from the European region and are mostly crossbred. In most cases, it is impossible to trace the breed of the cows.

2 Gir cow ghee is made through the traditional bilona process. In this:

  • A2 milk is boiled on low heat to remove its impurities and raw smell and taste.
  • After the milk boils, it is kept aside to cool down.
  • It is then poured into earthen pots along with a curd starter to convert it into curd.
  • Once the curd gets ready, it is churned clockwise and anti-clockwise with a wooden churner, known as bilona.
  • This process slowly yields butter, which is extracted from the curd.
  • This butter is then placed on low heat on a wooden fire. Gradually, the water from the butter evaporates leaving behind ghee.
